Simple vegetarian recipes for new vegetarians

Most of my friends and family are working hard soccer mom, basketball dad, super health conscious parents. Even my parents, friends lead very active lives and are still closely knit group who loves food, we pushed hard to make time for meals, create find 2 take hours to prepare. Now take that to the next level with dietary restrictions such as vegetables or vegetables only but without dairy products, and our recipe resources are even more limited.

We started on this pathbecause my mother, nicknamed Bubba by her grand babies, has a happy and a committed advocate of the vegan-ism for a while. But even before she was a vegetarian. While my husband and I are not prepared to do without eggs and fish, etc, including his cholesterol almost 300 points a year ago has us on a journey to a healthier way.

A year later, Jason's cholesterol under 200, which is far more manageable than 280! The factors are: he exercises 2-3 times per week, he takessome herbs prescribed by our doctor, and finally changed our diet. It took only 6 weeks his cholesterol almost 100 points lower.

The hardest thing about being vegetarian, the thought of all the delicious steaks and the family of all time favorite fried chicken and rice. We had quite creative in our meals, sometimes so much to us than our children.

Tips for your transition:


Just search for vegetarian and vegan recipes. If youmake cooking a chore, or if it is too daunting, you can give up entirely.
Start eating vegetables with you and your family likes (not scare everyone immediately with eggplant, if it does not already make a joint appearance
Plan your meals a week, instead of just one meal at a time (this will make your shopping easier and to reduce spoilage)
Have no fear to spice to your meals. Vegetables and butter may not be as appetizing after three consecutive mealsit.
Buy a lot of your favorite fruit. While there are tons of great easy vegetarian and vegan desserts, often the sweet Gala apple or a ripe mango will stave off that craving.
Your diet should be colorful. A great rule of thumb, my doctor has taught me. If your disk is a color, your digestive system does not work so well. You want green, red, yellow in your meal. For example, if you know tofu roast with potatoes and eat it with rice, they are all / yellow in colorand is not a balanced combination of foods for a meal.
Have your children help you choose the vegetables and fruit in the supermarket (if practical). This gives them ownership in the meal. Heck, I would they start to cook with you. We all enjoy the meal more if our children to participate in the cooking process. Our 3-year-old is the best help in the kitchen!

We did not switch because of animal rights, although this should be considered seriously, but it was because thethought of losing my husband to the way we ate seemed ridiculous. We make these changes because our health and the little tips helped (and continue to help) us eat better for life.
