It's really not that hard to make tasty and Chicken Noodle Soup. Really! With the convenience of using a supermarket roast chicken, you can begin to get incredible flavor without zero. When I began testing recipes, I looked through all my usual cookbooks, gourmet cookbooks, online, etc. All the recipes I found seemed to be missing the taste I was looking for - you know, that big "Chickeny" Depth homemade chicken soup? So I began the searchCookbooks from churches and women's organizations.
Although I do not find the exact recipe is, I have some thoughts that led to my current method. I use a pasta recipe from a very sweet lady who goes to my church Koster, Delores. Your soup recipe is in the St. Francis Xavier, Carbondale, Illinois cookbook.
The fight I had to have lied in the production of stock / broth / base for the soup. That's when I decided it had a better, simpler, faster way to get the taste I havewanted, without a whoe chicken, vegetables and some spices to figure out how to get married together properly.
One night after my daughter's basketball game, we stopped for dinner get grilled chicken and the grocery store for. My family only likes the white meat, so we have some of the chicken remains. Instead of throwing it, because no one likes the dark meat, I froze the whole thing, until I could figure out how to with the remaining chicken.
My sonhad asked for homemade noodles and chicken, and that's when I decided to give it a try. I added the grilled chicken which went into the water with some vegetables and spices for the soup base to make order. After a few hours of simmering on the stove - and it smelled great - I filtered the mixture and without bones, what is left of the chicken. Ironically, my children are not really as much chicken in the soup, so this idea really works for us. And for some reason, they eat thedark meat in this soup.
I add the noodles and simmer for at least an hour or two. I usually have towater before adding the pasta. The result is really good. It is one of those dishes that everyone looks forward to become, and the kids always ask if they feel unwell. I think this is not the true test of chicken soup, right? I hope you enjoy it too!
By the way, feel free to new carrots or whatever other kind of vegetables you would like to add this soup. My childrenrather have a bowl of steamed broccoli and cauliflower to dip it in the broth, so that I can add nothing, but have the strained broth noodles for us.
Chicken soup with noodles
A grocery store rotisserie chicken - or the remaining part of one. (If you like lots of chicken in the soup, you may want to add a chicken breast or two, if not with a whole chicken)
1 medium onion, quartered
2 stalks celery, cut into pieces 2 inches
5 whole peppercorns
1 T. poultryWort
1 T. Sea Salt
Water
In a Dutch Oven or large soup pot. Add all the above ingredients except water. Pour enough water over to cover the ingredients by 1 inch. Bring to a boil, then simmer for up to a lie and for at least 1 hour, but preferably 2 I like to start this first thing in the morning for lunch, have lunch or early for dinner.
With a slotted spoon or spider ghost, strain chicken, bones and vegetables from pot. Put pot back on burner,and about 3 cups of water. Bone chicken, meat reserved for the soup. If you want vegetables, especially carrots add, do so now. If you like peas, you can wait until the last 10 minutes of total cooking time.
Noodles
1 egg
3 egg yolks
Cold water
2 C. flour
2 t. Salt
Place in a medium bowl, all the eggs. Whisk until light. Add 3 tablespoons cold water and salt and whisk until well combined. Mix the flour with a fork until you can collect up toin your hands and form a ball. Depending on the weather, I have ad a bit more water to bring it together had eight, but that not to add too much and sticky.
Let the dough sit for about 5 minutes. This is important because it allows the dough rolled out its much easier and less like elastic. Flour in the area, where you roll out the dough.
Roll out the dough to a large circle. I have it as thin as I can, about 1 / 8 inch, although some people like their noodles thicker.If you prefer it thick, you need to make time for cooking tender add.
Cut with a pizza cutter, the dough into noodles to desired width and length you prefer. Place the noodles in the broth simmering and simmer, take for at least 1 / 2 hour, but they are more tender, if you have time to cook they can for an hour. You can use the chicken over the last 15 minutes. Taste for seasoning, because I usually need at least another teaspoon of salt to this extensionPoint.
